Lahlib Bi-Looz (Moroccan Almond Shake)
1/2 cup slivered almonds, Blanched
1/3 cup sugar
1 cup water
2 1/2 cup milk
1/2 teaspoon orange blossom water
1 dozens almond extract (optional)
2/3 cup vanilla ice cream
Blend almonds, sugar, and water until smooth. Add other ingredients and blend until slightly thickened (if you use ice cream, it will be quite thick). This recipe is good for 1 serving.
Masfouf De Tunis (Tunisian Sweet Snack)
1 lb semolina
1 cup water, hot
8 Tablespoon butter, melted
4 Tablespoon raisins
4 Tablespoon almonds, Blanched halve/toast
3 Tablespoon pine nuts
1/2 cup sugar
1/2 lb seedless grapes
1. Mix the semolina and hot water in a bowl. Put it into the top (kesskess) of a couscousier or a Chinese-style steamer and steam, covered, over hot water for 10 minutes.
2. Remove the semolina to a bowl and stir in 4 tablespoons of the butter. Mix and toss to separate the grains. Return the semolina to the steamer and steam, covered, for 20 minutes. The semolina will expand and will be cooked through.
3. Soak the raisins in hot water for 5 minutes and drain. Remove the semolina the second time, stir in the balance of the butter, 4 tablespoons, and turn the semolina out on a serving dish. Add the raisins, almonds, pine nuts and mix and toss
together. Set aside a few raisins and nuts to decorate the top of the Masfouf. Sprinkle the Masfouf with the sugar and decorate with the raisins and nuts.
Serve at room temperature. Serves 6 or more.
2 T butter
1 c sugar
2 egg yolks, creamed
1/2 c milk
1 c flour all purpose
1 t baking powder
1 t flavoring
1/4 t salt
2 egg whites, beaten
Combine ingredients adding beaten egg whites last. Place in greased, shallow pan. Dot with butter. Sprinkle with sugar, cinnamon and chopped nuts. Bake in moderate oven, 350 F. until done. If baked too fast, nuts will sink to bottom. This recipe is good for 1 serving.
